I’ve Already Gone A Little Crazy For Sweet Corn Ice Cream

Because ice cream is even better when shared with friends, we’ve asked a handful of our favorite food bloggers to share a recipe for National Ice Cream Month. First up is Alejandra Ramos from Always Order Dessert. I’ve already gone a little crazy for frozen treats this year with the arrival of the bookPaletas by Fany Gerson and the discovery of a fantastic gelateria a short bike ride from my home.

This week’s recipe for Sweet Corn and Raspberry Ice Cream is an unusual combination, but photographer Stacy Newgent assures me that it’s her favorite flavor from the newly released book, Jeni’s Splendid Ice Creams at Home, which she was lucky enough to photograph last summer. If using sweet corn in ice cream isn’t quite your thing, you can try Top Chef Harold Dieterle’s recipe for creamed corn, or you can skip corn all together and try Stacy’s first recipe for apple dumplings.

Sweet Corn Ice Cream

2 to 3 ears fresh sweet corn
　　
1 1/2 cups half-and-half
　　
4 egg yolks
　　
3/4 cup plus 2 tablespoons sugar
　　
1/3 cups heavy cream
　　
1/3 cup evaporated milk
　　
A scant 1/2 teaspoon ground cinnamon, preferably Mexican cinnamon
　　
2 tablespoon orange liqueur, preferably Gran Torres
　　
1 tablespoon fresh lime juice
　　
Directions
　　
- Combine the heavy cream, milk, corn, and vanilla bean in a heavy saucepan over low heat. Let simmer very gently for 30 minutes, stirring every 10 minutes or so. Turn off the heat, remove the corn and use a knife to slice the kernels off the husks. Return the corn kernels and husks to the hot milk mixture along with the sugar and teaspoon of salt, stirring until the sugar is dissolved. Cover and let cool to room temperature, about one hour.
　　
- Remove the husks and the vanilla bean, and transfer the milk and corn kernels to a food processor or blender (or use a stick blender) and puree until fairly smooth. Pass through a fine sieve into a clean pot, pressing out as much liquid through while removing all the solids. [Cook’s note: The corn mush solids can be eaten on their own or reserved for another use; they’re wonderful added to a cornbread or corn muffin recipe]
　　
- In a separate bowl, whisk together the 3 tablespoons cornstarch and remaining ½ cup of cold milk until smooth. Add to the strained mixture and place over medium heat, stirring constantly in one direction until mixture thickens and coats the back of a spoon. Continue to cook and stir for 2-3 minutes until you can no longer detect the taste of cornstarch. Turn off the heat and transfer the thickened corn base to a clean bowl. Press a piece of plastic wrap against the surface (this will help prevent a skin from forming on it while it cools) and chill in refrigerator for 3-4 hours.
　　
- Process the chilled mixture in your ice cream maker according to manufacturer’s instructions. Serve immediately for soft-serve texture, or transfer to a freezer safe container and let freeze for 2-3 hours before serving for a firmer ice cream.

The Wonder And The Magic Of Disney Dream

The unconscious mind speaks with images that have a specific meaning, which many times is totally different from the meaning that the same images have in your daily life. For example, your mother is a person who loves you and protects you in real life. However, in your dreams she represents the primitive nature of the human being, which is satanic, violent, immoral, and cruel like an animal.

The Disney Dream, however, was designed differently and the spaces never felt crowded. It was even easy to find seats in the restaurants and amazingly we never saw a line of more than a few people in Cabanas. After being aboard for two days, I realized what Disney engineers had done to create this feeling.

The architects of the Dream used three features to keep the feeling of intimacy in the larger ship; curves, divisions of space and shorter straight lines. By carefully manipulating space the only time we even saw a large crowd was at the Pirates in the Caribbean party when it was expected.

Curves can be seen most clearly in Cabanas and the District, the area that becomes adult-only after 9:00 and contains a couple adult-only lounges all day long.

In Cabanas, there is one large eating area that is arranged in a semicircular layout similar to the Beach Blanket on the Wonder and Topsiders on the Magic. Sight-lines are broken so that at no time will you be able to see more than a hundred guests at one time sitting at their meals.

The best illustration of these curves is seen in the District. Located on deck 4 aft, this area can be access from the outdoor promenade or from indoors mid-ship past the art gallery. There is a single passage that connects all six lounges that meanders from the port side, diagonally to the starboard side then back to the port. This passage has very few straight lines and employs dramatic curving walls and round spaces to reduce sight lines and noise. With a possibility of seven distinct areas of the District crowds are actually smaller than the same crowds in the three (or four) available spaces on the smaller ships.

These curves also give the ship a more organic feel throughout the ship without evoking the expected sea-sick feeling that I expected.

Divisions of space keeps the small feel in the larger Cabanas restaurant on deck 11 aft. This is the place that serves food throughout the day but smaller seating areas and stations in a cafeteria style floor plan make it easy to navigate.

Unlike the equivalent restaurants on the Wonder and the Magic, the seating area in Cabanas is divided into six area; five indoor spaces and one outdoor space. Not only is there sufficient seating, you never have a complete sight line that allows a guest to see much of the crowd. This cuts back on both sound and the subconscious feeling of being in a huge crowd even though there is plenty of space for everyone.

Secondly, the serving area of the restaurant is not organized as one long food line on each side of a single buffet with plates on the start and drinks at the end. That works fine on the smaller ship's capacity of 2600, but with a capacity of 4000 guests lines and wait time are virtually eliminated. Plates and flatware are available about every 20 feet or so. Drinks are served, not from the 'end of the line' but from four separate stations throughout the restaurant that are never crowded. Food is divided by nationality and type in smaller walk-up sections where individuals spend only a few moments looking and getting servings of their desired dishes. Finally, there is plenty of space to get around the occasional line that may form in one spot or another keeping traffic flowing at all times.

On a cruise ship there are a few times passengers expect long straight lines. On both the Disney Magic and Wonder the long corridors used to access cabins can be almost dizzying to walk from one end of the ship to the other. On the Dream there are no corridors that are half as long as the ones on the smaller ships, a real surprise if you are used to cruising.

To make shorter straight lines there are as many as four dog-legs on a single deck that keep the sections short and manageable. Also, more decks incorporate a walk-around to get from one side of the ship to the other in as many as nine places along the deck. With all the turns and cross-overs the ship actually feels smaller than the smaller ships. At the same time, it is harder to get lost than the smaller ships since there are fewer dead-ends.

Over-all, it seems that the Disney Dream was designed with more intelligent design than any of the eight cruise ships I have been on. Once again the company known to set high standards in the entertainment industries has raised the bar for all cruise lines when designing such large ships. Disney Cruise Lines proves one more time that the guest is the most important feature of their property, not an accounting formula that tries to get the most dollars out of every cubic foot of space. The Open Door

Twenty-one years ago, I dreamed I was trying to get into a building by pushing through one of its solid brick walls. It was hard work that got me nowhere at all. All it did was exhaust me. I stood back, walked around the house, and discovered an open door. I realised that the door had been open all this time.

This short, simple dream helped me to see that there was a much easier way for me to get to where I wanted to be. I realised that I believed the way was tough, that I needed to push to achieve my goal. What an exhausting belief!

I had this Dream a year before I began my research into dreams, and my interpretation, while insightful and life-changing for me, was basic. If you brought this same dream to me for a dream therapy session, we would spend a full hour exploring the many concurrent levels of meaningful insight such a dream offers, and I would lead you through a dream alchemy practice to transform limiting beliefs that block your progress into more rewarding ones that open your way.

When I had this dream, I hadn’t done the research, hadn’t developed and tested the concept of dream alchemy, hadn’t seen or experienced the power of working with dreams at such a deep level. It was enough for me, back then, to stand back and look at where I pushed hard in life – and why – and then to look for the open door, the opportunity I was not seeing. And this approach worked quite magically for me.

Now, looking back with twenty years professional experience in working with dreams, I also see the building as me, the brick walls as my solid beliefs, my pushing on the walls as a readiness to breakthrough my beliefs (my illusions of reality), and the open door as the result of surrender to change.

My Dream World

It’s been a quite long time since I stopped posting but now suddenly I realize I should continue it especially when I feel really boring. I was thinking about uncertainty, recently there’s been a lot of talk about this topic, well the reason is a lot of mathematical modeling and special attention given by my statistical professor. Every time I saw him fighting for the best predictive nature, even I was wondered when he predicted uncertainty from the data set which is supposedly giving a wrong prediction. Of course  this is no wonder to a well experienced person and I was even wondering when this global scale climate model was predicting uncertainty and people were (I mean to say researcher) fighting each other to find the best predictive value.

I was wondering how about this uncertainty in Life. Will it be possible for experienced people like them to apply this statistical rule to predict the future of life based on previous dataset of a person or investigate the nature with someone who passed away and left a lot of evidence……I am sure statistician will find a way to make a best fit line passing through the mean having a regression square value of 1.0 (the so called best fit) and neglecting the outliers (the extreme events in life……could be anything)

But to be honest is it possible to throw away those outliers in life like the statistician do considering them as error to the data…

I am sorry to be sadistic all the time but to me these outliers in human life brings back the situation which you never expected for……..

What Is Your Dream Dream

This is going to sound boring to a lot of people, but honestly, I’d just like to have a dream where I’m hanging out with all the brilliant psychology-minded people I know who live on the other side of the pond from me and therefore I’ve never met IRL (as well as the one or two I HAVE met, and a couple really close friends who also live far away). We’d talk, hang out, discuss shared interests, practice skills… I dunno.

The thing that would suck, because it always does, is waking up and knowing it didn’t really happen, that I still haven’t met any of them IRL and am still FAR away (geographically, financially, temporally) from doing so.

But then later in the day, I’d think back on the Dream, and remember that I got to “see” and “spend time with” some friends I don’t get to see near enough. And then I’d smile.

Because I always do.

I Will Always Remember Your Face

I will always remember that day when we first met and when you were taken away from me. That dread full day. But today is that day that I must say what’s been hiding in me. I will tell my story to you, to your grave stone, to your soul that still lives on, to that look-a-like cloud that I saw that day.
It was that day, in January, when the principle told us that we had to sit with our homerooms. That was when I noticed you. It was like love at first sight, but I couldn’t, wouldn’t tell anyone until I knew your name. I asked tons of my friends, till I came to Cecily, she said that your name was Mike. Mike. I said your name over and over.
Then that day a few days later your were waiting to go into science, in front of my locker talking to Jay. I said” Could you please move.” And you did and it was my first words that I said to you. The next day, I think it was in second period, you were standing with Luke, Ethan, and Jay. I remember poor Ethan getting punched. I said “Hey guys can I get to my locker?”

Ryan said “Uh no.”
So all I did was move you guys and got to my locker. I opened it and you looked in and saw my locker and which was such a mess. But you didn’t care. I couldn’t stop thinking about you, and I still can’t, I guess it was your.... I have to stop thinking about this, I’m going to get tears on my paper.
Then the second to last day, you were sitting in back of Caitlin, I remember I had I love M. on my hand and, well you saw it, and me acting like I wanted to kill Billy. I was surprised you weren’t discussed. Seriously I was.
In 8th grade I never saw you. You were in the smart people team, and well you know I wasn’t that, well, smart only in the summer, and everybody knew that. I only saw you at lunch. I couldn’t wait till then. I thought about you 24/7, it was getting to much.
In 9th I got to really know you, because you were in all of my classes, and we hung out, and were going out.
I remember the night out to the movies, we snuck in and nobody found out. It was the best night ever. But I think the best time was just hanging out at the park on Becca’s birthday, you, me, and well everyone else but that was a special night, we really had fun.
That night we played like every game in the world to about 1:00. Your parents didn’t care they knew me very well. Then we watched The Others and Thirteen Ghosts. I was so scared but you held me, and I felt so much better. I felt safe, the first time I felt safe with a guy. I knew we would be together for a long time.
In the 10th grade, we were still going strong together, nobody could break us apart. Even if we had a few fights, but every good relationship has a little down side. I was learning how to drive (uh the hardest thing in my life.) I really didn’t get to see you, I was in Las Vegas for most of the summer, that was the hardest summer ever.
In the 11th it was hard, we were preparing for our last year of high school and then collage, we never thought we would get out of it alive. But we went through it perfectly, and guess what no detention, well maybe for our friends but that didn’t matter. We spent that summer together, in New Jersey, which was so much fun, even if it was with our families.
In the 12th we celebrating, it was fun, our last year, and we were all right, still strong with our heart and mind and for our time together, our parents thought that night that we were going to get married with out them knowing, but we wouldn’t go and do that. They gave us to much support, and plus I knew what I wanted, and I didn’t want to go that. You were ok with that. Our friends said that this was something special.
When we both were 21, we started going to clubs. We didn’t go alone just in case, well you know. Our friends always came and things like that.
But it was that night I will remember. That cold, snowy night. Tony was like, gggggrrrrrr.... because of what he had to drink. He said get in to me and you. I didn’t go because Mandee and I were waiting for Becca. I told you to wait to, but you said that you would be fine.
When Becca came, we followed you two. We were wondering were Tony was taking us, I told him to go to my house but instead was going to his. He swerved and hit a another car and we got out and well, you weren’t OK.
I called the ambulance, it took them 20 min. I took of my jacket and put it on you, rubbing your hand and told you it would be all right. When we got into your room, an hour later, the doctor said that it was to late that you had gone. I cried and cried. It had also, been to late for Tony too.
Mandee, dove Becca and I home, was crying my heart out, I couldn’t stop. I kept saying “ I told you, I told you. I told you not to go.”
I was thinking to myself that night that I should have gone with you, so I could be with you. I’m now writing in “the crying room.” And I am crying. Trying to calm myself down but it’s not going to work.
When I got out of Collage I started to work with this program, it teaches about the effects of people driving drunk, and I used you as an example. I don't cry as much anymore. But when I tell my story a lot of people do.
And I still miss you. I come by once in a while, not everyday again. I still sit and talk about the good and bad times.
